·       THE DEVELOPMENT AND STATE OF MATURITY OF THE PEARS MUST BE SUCH AS TO ENABLE THEM TO CONTINUE THEIR RIPENING PROCESS AND TO REACH A SATISFACTORY DEGREE OF RIPENESS.

·       PEARS ARE CLIMACTERIC WITH FIRMNESS OF THE FRUIT AND TASTE QUALITY STRONGLY DECREASING. THE HARVEST DATE IS IMPORTANT FOR THE KEEPING QUALITY AND REACHING THE OPTIMUM TASTE. FULLY RIPE PEARS ARE VERY SUSCEPTIBLE TO BRUISING AND PRACTICALLY NOT SUITABLE FOR HANDLING OR TRANSPORT. THEREFORE THE EATING RIPENESS SHALL BE REACHED ONLY AT THE LAST STAGE OF TRADE OR AT THE CONSUMER.
