- Tolerances in respect of quality and size shall be allowed in each package for produce not satisfying the requirements of the class indicated.
- Tolerances are provided to allow for human error during grading and packing process. During grading and sizing it is not permitted to include out of grade produce, i.e. to exploit the tolerances deliberately.
- The tolerances are determined after examining each sample package and taking the average of all samples examined. The tolerances are stated in terms of percentage by number or weight of produce in the total sample not conforming to the class, stage of development or size claimed.
Quality tolerances
- “Extra” Class
- 5% by number or weight of mushrooms not satisfying the requirements of the class, but meeting those of Class I or, exceptionally, coming within the tolerances of that class.
- Class I
- 10% by number or weight of mushrooms not satisfying the requirements of the class, but meeting those of Class II or, exceptionally, coming within the tolerances of that class.
- Class II
- 10% by number or weight of mushrooms satisfying neither the requirements of the class nor the minimum requirements, with the exception of produce affected by rotting or any other deterioration rendering it unfit for consumption.

Size tolerances
- For all classes: 10% by number or weight of mushrooms not conforming to the size indicated.
- When the mushrooms are sized, which is obligatory for the “Extra” class, 10% of mushrooms, either by number or weight, may fall outside the given size range.
